Chilled Sweet and Sour Cucumber Noodles with Toasted Sesame Seeds is a simple dish that is tons of fun to make. However, the dressing is what makes this salad a show stopper. Sweet, savory, and with just a touch of heat. You really won’t believe that the cucumber could taste this good!

Ingredients

  • 4 medium organic cucumbers, rinsed and peeled
  • 1/2 cup diced red onion
  • 3/4 cup rice vinegar
  • 2 1/2 teaspoons brown sugar
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons toasted sesame seeds

Directions

With a mandolin or spiralizer, slice the cucumbers into thin ribbons and place in a large bowl.

Add in chopped red onion, red pepper flakes, rice vinegar, brown sugar and water. Cover with a plastic wrap and place in the fridge for about 2 hours or until chilled.
