LOVE in a Bowl

For many people, food is their love language. They spend their time, energy, and attention serving tasty, nutritious food in an appetizing way. And that’s especially true on Valentine’s Day. So, whether you are eating lunch together, or packing a to-go lunch for the office, this recipe for LOVE in a Bowl will remind them of just how much you care this Valentine’s Day. Remember, Love doesn’t always need candles and reservations. Sometimes it looks like lunch—made with LOVE.

Ingredients 

For the bowl:

  • 4 cups mixed leafy greens (arugula, baby kale, or butter lettuce)
  • 1 medium head cauliflower, cut into florets
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste

For the extra delicious tahini sauce:

  • ¼ cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, grated
  • 2–4 tablespoons warm water (to thin)
  • Salt, to taste

Optional toppings:

  • Sesame seeds
  • Pink peppercorns
  • Pomegranate seeds
  • Fresh herbs (parsley or cilantro)

Directions

  1. Preheat the oven to 425°F. On a large sheet pan, toss cauliflower florets and chickpeas with olive oil, cumin, smoked paprika, salt, and pepper. Spread evenly.
  2. Roast for 25–30 minutes, flipping once halfway through, until the cauliflower is tender with crisp edges and the chickpeas are lightly crunchy.
  3. In a small bowl, whisk together tahini, lemon juice, garlic, and salt. Slowly add warm water until the sauce is smooth, pourable, and generous. This is not the time to be stingy.
  4. Divide leafy greens between two bowls. Top with roasted cauliflower and chickpeas. Finish with a liberal drizzle of extra tahini and any optional toppings.
